Segawa Tea Farm in Kagoshima grows this early-ripening Yutakamidori with eco-farmer certification — fewer pesticides, closer to nature. The result? A Sencha with a softer edge than you’d expect. Bright herbal notes upfront, a clean umami core, and a lingering astringency that opens up as you sip. We brew it at 80°C for 60 seconds, but try cold brew too — the bitterness mellows beautifully. This is astringency worth savoring.

Yutakamidori" is characterized by its strong astringency and strong umami.
Particularly, Mr.Segawa's "Yutakamidori" has a nice astringency which is very refreshing and easy to drink. So please don't be afraid of the astringent taste, try brewing at 80 degree Celsius!
If you don't have a temperature-controlled electric kettle or thermometer, use the following method to cool the water.
- Boil water and transfer to a teacup once.
- Wait for 2 minutes to allow the temperature to drop to around 80 degrees.
*The temperature drop will vary depending on the shape and material of the teacup.
How to Brew
- Prepare the water at 80 degrees Celsius.
- Put the tea leaves in the teapot and pour the hot water.
- After 60 seconds, pour the water into the teapot, shaking it slightly.
- The last drop from the teapot is a superb drop of tea, rich in the flavor of the tea leaves. Pour every last drop of tea gently.

Yutakamidori is an early-ripening tea cultivar largely cultivated in Kagoshima. It has strong umami, with a powerful astringent aftertaste and aroma that smoothly passes through the nose. Among the various flavors, Mr.Segawa's Yutakamidori has an excellent astringent taste.
He has been certified as an "eco-farmer", which means he uses fewer pesticides and chemical fertilizers and is friendly to both people and the environment. He first wondered if using pesticides was necessary, which made him reduce pesticides little by little and carefully observed until he figured out the unnecessary amount of pesticides. Then he finally developed his current tea-cultivation style.
Without chemical fertilizers, the tea is not completely organic, as the flavor decreases, but the tea produced in a way that is closer to nature has a softer taste. We recommend brewing it at a high temperature to enjoy the rich astringency, or at a low temperature to enjoy a balanced taste.
